How hot is your Salsa?

All the salsa I make is tuned to my personal tastes. Here is a handy guide.

Mild - No Spice at All

Medium - Eat all you want with a pleasant heat level

Hot - Enjoy in smaller quantities, such as on tacos

Super Hot - Test your mettle. Not for the faint of heart.

XXX - Are you insane? For the people that want to eat fire for the endorphin rush.

Do you grow your own produce?

No. I live in the center of McKinney. Even if I had enough land grow to this much produce, the north Texas growing season isn’t long enough for year round production.

Which pickle is the spiciest?

Extra Spicy Dill is the spiciest. Firecracker pickles have more spice per jar than the Spicy Dill, but also have a small amount of sugar that cuts the heat. Spicy Dill has no sweetness to it all, so while it has less spice per jar, some people report that it is spicier than the Firecrackers.

How did you get started selling Pickles?

I started off selling baked goods at the McKinney Farmers Market. The farmer next to me really loved my baked goods and would give me produce in exchange for tasty treats. One weekend he gave me two cases of pickling cucumbers, so I learned how to pickle. I took them to the farmers market on a lark, and the sold better than the baked goods.

Speaking of pickling cucumbers, what kind do you use?

Finding a reliable source of pickling cucumbers is a serious challenge. A few years back I switched to hot house grown English Seedless Cucumbers and loved the finished product. With the added benefit that they are available year round.

What is Cowboy Candy and what do you eat it with?

Candied Jalapenos. Much like ‘Franks Red Hot’ I put that sh*t on everything. We start by removing the the seeds and membranes to remove MOST of the spiciness. Then we candy them in an apple cider vinegar brine. I’ve eaten them straight out of the jar. Put them on sandwiches. Topped pizza. Eaten them with eggs. Mixed them with Cream cheese. The list goes on and on.
